4 Unusual BBQ Grill Recipes

It’s official, BBQ season is here.

With the summer heat finally making an appearance, it’s the perfect time to dine al fresco or host a garden party. But after years and years of the same, the classic burger or hot dog might not be motivation enough to get the grill out. Helping to spruce up your soiree, here are 4 unusual or unexpected BBQ grill recipes that you might not have thought to try.

#1 Grilled Watermelon

Trust us, it’s good. Fresh and slightly spicy, this is the perfect mid-afternoon or late-night snack if you want something light and full of flavour. Perfectly paired with a cocktail or fruity drink, these grilled watermelon sticks are quick and easy.  Transforming the watermelon into more of a meaty, chewy texture, it’s a delicious sweet-yet-salty snack.

Ingredients:

  • 1 watermelon
  • 1 lime
  • Salt – Smoked salt is extra delicious
  • Paprika

  1. Cut your watermelon into flat lolly shaped wedges
  2. In a small bowl, mix your salt with a bit of paprika to make a smoky, spicey salt. If you have it, smoked salt flakes are especially delicious, adding an extra smoked flavour.
  3. Place your melon onto the grill with a little bit of oil, and sprinkle some of the salt across one side.
  4. Flip them over after a minute or two so you can see grill marks.
  5. Once they’re done on both sides, squeeze some lime juice over and enjoy.

#2 Potato Skewers

The ultimate side dish - ditch oven chips and make every part of your feast on the grill. The perfect use for a side burner, this potato skewers are crunchy on the outside and soft inside. Coat them in the marinade of your choice to make them extra taste, or stick with our favourite, classic garlic butter.

Ingredients:

  • 4 potatoes
  • Kebab skewers
  • Garlic butter
  • Salt and pepper to season
  1. Cut the potato into thin slices.
  2. Place the potatoes into a microwave safe bowl and cook them for around 10 minutes. This will make sure you have soft insides to your crispy potato skewers.
  3. In a bowl, make some garlic butter or melt pre-made garlic butter to create your coating.
  4. Put the potatoes into the marinade and leave to rest in the fridge until you’re ready to BBQ.
  5. When the time comes, build your potato skewers and place them onto the grill, turning continuously to get a good crispy outside.
  6. Add salt and pepper or any other seasonings or sauces you might want and enjoy.

#3 Stuffed Grilled Bananas

An easy and delicious dessert that’s totally customisable. Chocolate, caramel, cookies and more, simply swap out the fillings to suit your taste and enjoy these sweet stuffed bananas. Perfect on their own or add to a bowl of ice cream to level up.

Our favourite filling – S’mores bananas…

Ingredients:

  • 1 banana per person
  • Chocolate chips
  • Mini marshmallows
  • Biscuits or crackers
  • Any other toppings you might want, some Nutella maybe?

  1. Use a knife to cut a strip of peel. Leave one end intact so it stays attached but pull back the skin and use a spoon or knife to hollow out that section of banana.
  2. Place your ingredients into the hollow section, mixing together the marshmallows, chocolate chips and little bits of biscuit. You can also add some Nutella or any other spread here.
  3. Place the skin back down and tightly wrap the banana up in some foil.
  4. Set it on the grill and allow it to cook for around 10 minutes, until all your ingredients are soft and melted. Unwrap and enjoy!

#4 Grilled Romaine Salad

Spruce up the salad bar with this fresh favourite. Ideal for veggies and vegans, or as a delicious side dish, this grilled salad is quick and easy to whip up right when the soiree gets going. Totally customisable to your taste, why not grill some aubergines, prawns or mushrooms for a full dish, or simply grill the lettuce as a perfect pairing with potato salad or to top off a burger. Endlessly versatile and super quick, why settle for basic lettuce?

Ingredients:

  • For a main dish – 1 Romaine heart per person
  • For a side – ½ per person
  • Olive oil
  • Lemon, pepper and salt for seasoning
  • Any salad extras you may want

  1. Pull off the outer leaves of your romaine and wash the heart thoroughly.
  2. Cut the lettuces in half length ways and brush with olive oil. Season as you wish.
  3. Grill each side briefly. You want to be able to see grill marks but keep the crunch of the lettuce. It should only take a couple of minutes.
  4. If you’re making a salad, now is the time to prep your extras. We love ours with lemon and chilli prawns, miso mushrooms or aubergines.
  5. If not, simply plate up the lettuce and add a splash of lemon for extra zing. Or tear off individual leaves for a tastier topper on your burger.
