Interestingly, air fryer is a misnomer as they don’t fry food – they cook using convection, circulating hot air like a conventional oven.

And that delicious, crispy coating reminiscent of fried food? That’s a Maillard reaction, occurring when proteins and/or amino acids chemically react with carbohydrates.

Thank the food gods for Maillard, because it produces food with all the taste and texture of roasted or fried food, with no oil in sight.

Are air fryers healthy?

An air fryer’s health credentials depend on the appliance you compare them to.

What can't you cook in an air fryer?

They really are no good for cooking chips1 Chips are cooked unevenly they should never be put into a static air fryer. you need a fryer that turns over the thin chips (rotary fryer and then you still need to shake the pan at some stage.

Sorry Philip but I disagree, a bit. We cook chips in our air fryer and they've never tasted better. The difference is that our fryer has a rotating drum basket. 15 minutes and you've been to the chippy! Likewise it's got a rotating barbecue frame which cooks chops to perfection as, as it rotates, it keeps the juices basting the meat. It's also got a skewer rack which also rotates to make perfect kebabs and Med veggies. I agree that it is difficult when you've a static air fryer, we've been through 3 of them so far in the last ten years and do still have one in daily use but the rotary unit is so good I bought a second one in case they get discontinued in the future.
