Vegan recipes for Veganuary 

With the arrival of the New Year and a fresh start, plenty of people are making resolutions to get healthier, fitter, try new things and be more eco-conscious. One resolution that combines all these intentions is the trending movement known as Veganuary.

What is Veganuary?

Starting in 2014, the non-profit organisation ‘Veganuary’ has been encouraging people to try going vegan for January in an effort to support the move to a plant-based diet. Those who partake can help raise money for various charities, or just try it to challenge themselves.

We’ve gathered some of our favourite vegan recipes for Veganuary that you can use as inspiration if you are taking part or just to show you how tasty vegan food could be if you’re still umm-ing and ahh-ing about how to do Veganuary!

Vegan recipes for beginners

Vegan food doesn’t need to be challenging – there are some really easy vegan recipes out there that you should be able to cook without any bother. Here are a few of our favourite beginner vegan meals:

Vegan chilli

Chilli is one of the easiest recipes to make, and making it vegan is super simple. This is a very versatile meal too, you can have it with rice, in wraps or even on a baked potato. This recipe can be made easily in one of our casserole dishes.

Vegan meatballs

Served up with traditional spaghetti or served in a bun for a great meat-free meatball sub, this meatball recipe is another easy recipe that is just a simple adaption from a traditional recipe.

Roast summer vegetables and chickpeas

The simplest recipe you could want is chopping up some veg and opening a can of chickpeas and pouring it all onto an oven tray to roast, so easy! Use a food processor to make the food prep even easier.

Vegan meal ideas - breakfast

Wondering how you’ll convert your usual breakfast into a vegan meal? No need to worry, there are some simple changes you can make without completely creating a new meal plan, such as switching out your cow’s milk for almond milk or soy-free milk alternatives; or replacing the butter on your toast for plant-based or dairy-free butter. If you want to take some bigger steps though, here are some great Veganuary recipes for breakfast time:

Coconut and banana pancakes

A more exciting (and dairy-free) take on typical pancakes, you’ll be able to enjoy this classic weekend favourite whilst still working towards your vegan food goals.

Avocado on toast

Avocado on toast doesn’t need to just be a millennial trope, it’s a really tasty breakfast recipe that will set you up for the day and give you a tasty vegan meal too. A mini chopper makes light work of chopping up the avocado for you.

Vegan fry-up

Fry-ups are another classic British meal that many of us don’t know if we have the heart to give up, but you can take the leap to veganism knowing that a fry up is still available if you want it, just with more meat and dairy alternatives!

Vegan meal ideas - dinner

Vegan meals at dinnertime can be some of the trickiest to get your head around – coming home from a hectic day at work or to several hungry children; it can be tempting to revert to the usual recipes you know you can count on. But vegan food doesn’t have to be a hassle to make; you can try any of these easy vegan dinners to find some new favourites for your dinner roster:

Falafel burgers

Falafel is a classic vegan staple that is both filling and nutritious, as well as delicious! Popping some falafel into a burger bun or wrap makes for an easy dinner and a great option for vegan meal ideas.

Sticky noodles with homemade hoisin 

Noodles, veg and a vegan sauce, does it get any simpler and yummier? Leave the meat to the side for a vegan take on a classic stir fry dinner. A classic wok will make this cooking process lots of fun too!

Brownies are some of the tastiest after-dinner treats, and with a scoop of dairy-free ice cream or sorbet, these vegan brownies will keep the whole family happy.
